Good Knife - Chef's Knife
I bought a Dexter Russell fish filleting knife about 30 years ago and use it every day not only for butchering fish but also as a general purpose kitchen knife. It still holds a razor sharp edge with minimal sharpening. So I decided to buy their chef's knife and it seems to be of the same quality as a timeless filleting knife. The price was reasonable, shipping was fast, and I can cut a piece of paper like it's a razor. I am a happy camper with this knife. Have used it to chop veggies a few times now and it goes right through them as if they weren't even there.
