A chef's perspective When I first received this knife I was very skeptical and disappointed at the terrible condition in which it was delivered. The blade had chips and nicks along the entire edge. A very pitiful sight. The cutting edge was fixed with a few strokes on the steel. And now this is my knife that I use 12 hours a day. The cutting edge is very easy to care for. Keep the steel handy and use it often. The handle turns orange after I cut carrots, no problem at all for me. I wish there was a bit more weight again, no big deal. But what made me give it 3 stars is the shape I received it in, the coloring of the handle and the slightly curved blade. Otherwise I like it for the price range I got it for and would recommend it
