Well made, great price

These knives are great value for money. Before I ordered this set (three years ago!) I had a set of very expensive forged grips which I unfortunately lost during a divorce. Being on a budget I bought these expecting a mid-range knife to match the price. I was pleasantly surprised to find that these knives compare well to my old set and cost less than a third of the price. They are solidly forged, with thick lugs, well balanced, with a full shank and nice cheeks. They feel good in the hand, shave sharply and stay sharp for three years with daily use (I love to cook). In fact, I'm preparing to sharpen them for the first time and they're not that dull yet (I recently cut myself to the bone when I slipped while washing a chef's knife and my nanny didn't heed my warning and got a good set of stitches from the knife for cleaning vegetables). To answer some of the negative reviews I've seen, I'll share some information about good knives. First, it's stainless steel, NOT stainless steel. Stainless steel is generally much worse for forging knife blades. That "surgical stainless steel" is written on every old-fashioned knife is no coincidence. A knife that doesn't rust if mishandled is probably not the best knife, is difficult to sharpen, and doesn't hold the edge well. These knives will rust if not looked after. Use your knife, was your knife, dry the knife thoroughly and put it away. Second, with proper use and maintenance, they offer excellent edge retention. Learn to use a sharpener and use it before each knife session. It balances the microscopic teeth at the very edge of the blade and keeps it sharp MUCH longer. Do not cut on glass, stone, hardwood, or cheap sheet plastic. Take a bamboo cutting board and use it. Again, your blade stays sharp almost indefinitely. Finally, never wash your knives in the dishwasher. You treat them with abrasive soaps and minerals and bang them against other metal and glass objects before subjecting them to extreme heat and humidity. That will ruin your knives. Instead, take a long-handled nylon brush and wash it with hot water and mild soap. Do not use dishwashing sponges, Ajax powder, steel wool sponges or harsh detergents. Take care of your tools and they will take care of you and last for many years without failure. Pick up a cheap set of fly knives and keep them in your desk drawer for offensive work. If I had to find one complaint, after many, many, many hand washes, the logos on the blades have faded significantly. I can easily see which knives I use the most. I do not care? nope This is a fantastic set of knives that will suit any chef and at an incredible price.
