Expensive but great

I usually dislike ice-hardened German knives (Henckels and Wüsthof) because cheaper and lighter stamped blades from good manufacturers (Victorianox) work just as well and somehow work better. Ice hardened blades are much more difficult to sharpen, many people just procrastinate and end up with very expensive blunt knives which is a waste of money. This Henckels we bought almost four years ago has become the paring knife my wife and I always reach for and I'm in the process of buying a second one even though the price has gone up almost 40% - thank Germany . The forged blade's heavy weight will tire a 10-inch chef's knife or meat grinder. But for a paring knife, the extra weight and strength is good. The handle and blade hold up very well in the dishwasher and will not discolor or lose the blade, which is very important. People SHOULD use the dishwasher for their knives because hand washing sharp steel puts you at risk of cutting yourself - it will happen. I can't compare this knife to a similar knife made by Wüsthof; All I know is a very practical utility knife for our household. And I reckon forty bucks ain't much for a blade that'll outlast us.
