Review on ๐Ÿ”ช Chef'sChoice 463 Pronto Diamond Hone Manual Knife Sharpener - Best 15 Degree Knives for Fast Sharpening, Recommended by Cook's Illustrated, 2-Stage, Black by Matthew Miles

So glad I finally bought this!

I have some weird knife sharpeners and a whetstone that I never knew how to use properly and they never sharpened my knives very well. The Chefs Choice 463 was recommended by America's Test Kitchen and I trust their reviews so I bought this sharpener while it was on sale. I'm so happy I did! I have sharpened my knives professionally for many years and have never been happy with it once sharpened, especially considering how expensive it is. Following the instructions, I first sharpened two of my old small knives (Henckels), which were very dull. I used the "saw" motion recommended in the instructions, although I had to run the knives through the sharpener about 20 times to get the sharpness I wanted (they were REALLY dull!). I was so impressed with how easily and quickly they sharpened to the edge I wanted, I then used two large Wustoff knives to sharpen them and was just as impressed with how quickly and easily they sharpened. I have just sharpened 4 knives to my desired sharpness for less than what professional sharpeners charged me. And I made it in my own kitchen and it only took a few minutes! I will never have to sharpen my knives again! I read other people's reviews, positive and negative, and took them into account when purchasing. I can only report my own experience, which was very satisfactory. FYI, I'm a senior and don't like making it myself, so if I can figure out how to use it, anyone can. My only recommendations are that 1) you place a mat, newspaper, or something else on the counter next to the sharpener when using it so you don't cut the countertop if you accidentally pull the knife all the way out while sharpening 2) be not clumsy and press hard when sharpening. Trust me, you'll still get a huge advantage with a little push. Based on some of the negative reviews I've read, I think some people put too much pressure on their knives when sharpening. I'm planning to buy one of these as a Christmas present for someone and have already recommended it to a few cooking friends.
