I was a line chef YEARS
I used to spend an 8 hour shift cutting food at a restaurant. I spent long days with a long knife in my hand. I have 2 good sets of knives at home that I used to sharpen in about 30 minutes. I had to warn everyone in the house that the knives are better than new because they are so sharp now. I wish I had bought it sooner because I still cook everything from scratch.
