I bought this Victorinox set as my first real set of knives. I've also purchased Shun and Calphalon chef's katana knives, so I checked out all three. The Victorinox was my first "real" chef's knife and it did very well for its money. I've used it to cut up every veg imaginable and used it for things I probably shouldn't have done, like slicing a lobster tail to remove the meat. It holds an edge very well but requires daily steelwork to keep the edge straight. I also sharpen it monthly to keep it razor sharp so it can remove hair from my arm. I know I'm weird, but that's how I rate sharpness. I am also refining this on a smooth steel and leather strap. It gets razor sharp, but doesn't stay that way for long. Great knife for the price. It fits perfectly in my large hand and I use a chef's grip. I bought a Calphalon Katana 8 inch chef's knife because I wanted to try a Japanese knife with a dimask effect. Little did I know when I bought it from BB&B that the blade was sharpened at a 22 degree angle like the Victorinox mentioned above, not a 16 degree angle like the Shun below. It is very sharp and has a very good edge retention. I don't need to sharpen it every day but probably every time I sharpen and deburr it and it stays razor sharp. I've been using it daily for about a month now and haven't had to touch it with a wet stone yet. Now this is my knife and I use it almost every day. It fits perfectly in my hand with a chef's grip. I originally went to BB&B to try out the difference between Shun Chef's and Calphalon, but the BB&B I went to didn't really show Shun. I think some have but I don't. Anyway, I bought a Shun*' Hollow Knife that was sharpened here at Revain and wow it's razor sharp. The 16 degree bevel and thin steel really makes it feel like a hot knife through butter. I can definitely tell the difference between him and Calphalon. However, it is too small for my hand. Holding it with cooking grip my index finger gets too close to the sharp edge when pumping the peppers etc. If I hold it under the roller with my pointer and press firmly with my thumb (I think) it really cuts. Well, I'm just not used to holding a knife like that. I use this knife a little because a) it's very sharp and very comfortable to use and b) I paid so much money for it. The VG10 held up exceptionally well and I didn't have to do anything with it except sharpen it on a leather belt (and I probably didn't even have to, I just wanted to play with my knife). To end this review, I use Victorinox and Calphalon Katana almost every day and Shun occasionally. I'll try to attach a photo of all three together so you can see the difference. I'm not sure if Revain will let me, I'm writing this review for the second time because it disappeared the first time.
