Overview of several knives.

It is difficult to rate a Mercery knife on Revain as I have 3 knives and you can only rate 1 review as all reviews for these products are combined. Stupidity. because you can't accurately measure the success or failure of a particular knife. Unfortunately I will write my review of 3 knives here in this 1.1 review. July 15, 2019 - Mercer Culinary M23210 Millennia Bread Knife with 10" Wide Serrated Edge, BlackBack In 2019, before the pandemic, I joined the movement to bake sourdough bread with my own starter. The knives we had were terrible for cutting sourdough. So I researched for a few weeks and based on the reviews and recommendations I pierced the 10" Mercer Culinary M23210 Millennia Wide Scalloped Edge Bread Knife Black. I LOVE this knife. It's so tough. You have to be careful, it is like that sharp that I saw through a 1/32" (0.79mm) deep boosblock cutting board multiple times when slicing fresh sourdough bread. I've used it about 55-60 times in the last 2 years and it still stays razor sharp. I've also used it for slicing brisket and holiday hams. I like how comfortable it is in the hand. Now let's move on to the final knives. Yesterday (November 7th, 2021) I wanted to buy a flexibly curved boning knife. After reading the reviews I decided to give the Mercy a try as I really liked the bread knife. I'm also ordering Mercer Culinary Millennia Black Handle 6" and Mercer Culinary Hell's Handle Large Fish Turner/Spatula 4" x 9". The fish turner hasn't arrived yet but will take care of it later.2. Mercer Culinary Millennia Black Handle , 6" Curved: This knife is very comfortable to hold and is well balanced. It's as handy as a bread knife. It's not as flexible as I was hoping, but I'll keep the knife. I will track and update the review as time permits after use. Because it's made from the same materials as my bread knife, I'm sure it will last.3. Mercer Culinary M23210 Millennia 10" Wide Serrated Bread Knife Black: I don't know how I feel about this. I haven't even opened the package, I'm considering returning it. The thickened part of the handle prevents the knife blade from flat contact with the cutting board This type is definitely good for cutting when the last half of the blade comes into contact with food.The only way to get a horizontal cut with the blade parallel to the cutting board is to cut on the edge of the board or table. Hope this makes sense Pending return of knife pending my wife's comments If she likes it then don't do it I don't see myself using it.
