I have a good set of expensive knives that are very much appreciated by everyday cooks. They cost a little more and they're 15 years old, so they'll probably cost twice as much these days. Still these knives are ok but I expected the steel to last a long time. I didn't understand this even though I used a professional sharpening system. Blade chipping will only get worse. Enter these knives. The quality is immediately evident when you see it. The grip and the full shaft immediately catch the eye. They have sharp lines with good contrast, making them a really significant visual impact. When you pick it up, the weight is tremendous, the thickness of the steel is good, and the balance between blade and handle is near perfect. They come out of the box sharp, usually even with my good quality steel knives, I run them through pavé at the end to get clean edges. But they don't need more than an initial rinse for you to cut. Due to the thickness of the blades I would expect the sharpness to last longer than my other set, although this means they take a little more effort to get them sharp again, which is a compromise I'm happy to make. My others are skinny so cracked although they have been very well cared for. So far they are impressive and if I need more knives in the future I will look for this particular brand. Actually I'm going to buy a set for my mom who still cooks every night. She's never owned knives this high, so I think she'll regret not taking the plunge sooner. Great knives, great price, great quality.
