Quality knife with a well sharpened blade

I didn't expect too much from this knife and I only bought it as I didn't want to risk my Wüsthoff knife. The blade of the knife is a full 11 inches long and almost too big for my knife block. It cuts meat, hard cheeses and vegetables very cleanly with minimal pressure. I love that he cuts fries by hand to perfection and yesterday I cut a whopping 10 boneless pounds. Slice the ham evenly. The edge has a slight concave and the sharpening finishes about 3/4" from the handle, so cutting onto the cutting board takes some practice (my Wüsthoff is similar). The grooves are a bit deeper than my other Granton knives, which helps to separate the food more easily when cutting potatoes or hard cheese, for example.Excellent value for money and quality.
