The basic version is correct but still worthy

I bought these knowing I would need to modify them. The handles are real walnut, which is a plus, but the tang (the metal body of the knife between the wooden handles) protruded very proudly from the wood, and the walnut wood itself was finished to a very coarse 80 grit. I've planned - and know how - to sharpen and re-profile knives, so as soon as I got my hands on them, I hammered down the shank until it was flush with the handle, using a sharpening block, and then sharpening strip, then sanded grip to a smooth 400 grit finish so it feels really good in hand now. I also removed those silly serrations and turned it into a real steak knife with no serrations. On the other hand, despite the fit and finish, the knife's steel is decent and I've got them sharp and they hold the blade well.
