Easy on knives

3 weeks later: My good kitchen knife dulled after just a few slices on a glass cutting board, but it stays put all night with this wood.Very happy with the purchase so far.As mentioned in other reviews you will need soft grit sandpaper to smooth out the rough surface.Curing: According to the product description it is pre-cured.If that is true I would hate to see as it was before they fixed it! The board arrived completely dry as if it had sat in the desert sun for a century. It sounded very light and empty. I bought a third party mineral oil and started treating it in earnest. The instructions von Boos say "don't overdo the oil on the board" but every other article I can find on the internet says there is no such thing so I soaked both sides of the board with mineral oil and let it stand for a few hours. Then I did it again and again and again. Within two days I managed to soak the board four or five times before it stopped absorbing the oil. I then wiped off the excess and sealed the board with Boos wax. I wanted to use a less expensive, thicker third party wax but my order kept coming in/being canceled so I couldn't resist and used the Boos brand. I left the board overnight again and have been using it ever since. Maintenance: After use, I wash my board with soap and water and a stiff brush. Then I wipe it off with a towel and let it dry overnight. I've had the board for three weeks now and just did my first "monthly" maintenance. I dumped a bundle of salt on the board and rubbed half a lemon on it. I then rubbed in more salt and lemon juice with a stiff brush, then washed with soap and water. After drying I add Boos wax to seal it. Next time I'll probably have to apply another batch of mineral oil first, but for now the record is good. Durability: So far so good. It is hand wash in cold water only. I will update my review when I see the cracks others have written about. It may be a product defect. OTOH, the boards may need a lot more curing than the boos instructions suggest. Edit: After a few months the cutting board started to stink. I ALWAYS wash it with hot soapy water and a stiff brush. I also rubbed it regularly (once every 1-2 months) with salt and lemon and reapplied oil and wax. However, the cutting board continued to acquire an increasingly rancid odor. But how do you clean it? I was afraid to throw it in boiling water because it is not the best idea to leave the WOODEN WOOD in the water for a long time. I also wasn't sure how to simmer a large pot of water long enough to really clean a cutting board. My pans are too small and not designed for the stove. But then I remembered that STEAM is hotter than boiling water! So I put a very large pot of water on the stove to boil, and then put a cutting board on top to let it evaporate. A NOTICE! You must leave a good inch or more open. Never close a heated system and never heat a closed system! I placed the cutting board off-center, leaving an inch gap along one side of the pot. I would then come back every 5 minutes to pick up the board and wipe up the liquid and foam that kept bubbling up. I also kept moving the board so each quadrant survived the fall time. It took a lot of attention for an hour (I had to put water in the pot again). but eventually the board started smelling WOOD again! So I let it dry for two days and just oiled and waxed it again. So if your board is starting to stink and you don't know what to do, give Steam a try! (But be careful!)
