BUYERS: Please know what you are buying and what you are NOT buying. You are NOT buying an impenetrable, indestructible stainless steel knife. Even stainless steel cutlery becomes stained and discolored. The expensive Shun knife is also made of carbon steel like these Calphalon knives, but the Shun knife mixes the blade with stainless steel for a higher quality metal alloy. This is a softer carbon steel that you can use to sharpen a knife blade, but it will discolor, pit, and rust. The less expensive Calphalon knife is also made of carbon steel mixed with "no-stain" steel - probably lower quality steel, hence the affordable price. The carbon steel in both knives can stain and rust IF YOU DO NOT MAINTAIN THEM IMMEDIATELY AFTER USE! 1. NEVER WASH IN THE DISHWASHER: Strong DW detergent will literally "eat" the thin sharp edge of the knife and make it serrated.
