This is an amazing counter material at an amazing price. Get ready for a nice variation in color and texture. Occasionally there will be a slight sapwood stain. But the properties of walnut sapwood are superior to the heartwood of most other woods, and it adds texture, so it's actually a nice feature. If you want to carve on it, FWIW, I've been using walnut cutting boards for years. You are superior to everything else. You hold the blades of your knife. Apart from regular lubrication with walnut oil, they are maintenance-free. That's right, walnut oil. Buy it at a grocery store with an oil section. It is edible and much better than mineral oil for conditioning and maintaining bare walnut surfaces. Leave on for one to two hours and then wipe off. If you use it as a cutting surface, be prepared for gradual erosion. If you don't cut it, it will last indefinitely with just an occasional treatment of walnut oil. This is really wonderful material.
