Even heat is amazing, and using lids to chop downy veggies like spinach with a little EVOO creates an environment where it gets the perfect texture. Eggs again with EVOO and some water give best results no matter how you like your yolks and with lids. The learning curve with these pans is pretty good for going straight out of the box. Improves taste. I hand wash and stack baking sheets for storage, sandwiching paper plates to avoid scratching.
