Very very very sharp ready to use. My wife and I cook a lot. I decided to go broke and buy us a very good chef's knife. It feels both with my "small but fat hands" and with her "much smaller, delicate hands". I really feel like if you had bigger hands and panted less when I'm holding the knife in the video, that would be handy too. The knife is also very well balanced from the transition to the handle.
