For vegetables, this is IT. Works perfectly.

oh my god that's a really great paring knife. Does exactly what it promises. The horizontal cut on the underside of the blade is very effective in preventing vegetables from sticking to the top of the knife. I've never seen anything work so well. Spicy? Wow, very very spicy. The blade is thin so you need to be aware of that, but other than that it seems to hold and sharpen well, with a bit of hardening. However, I had to master two things: 1) Because the blade is so sharp and thin, picking up sliced vegetables takes some practice. With my polypropylene cutting boards, I need to get that angle right. 2) It's a bit small for me as I use a 10" Dexter chef's knife, but it takes a little getting used to. I don't like pulling out extra knives for other tasks, but this work is so excellent with veggies I pull out. Once you get used to it, I think you'll like it.
