You must know this degree or angle of your knives

Never could master stone and some other grinding objects. That with the degree ratio helps you stay consistent I think you would call it. I can sharpen with this and have found if you do it about once a week. I call it buffing and go through it about six times - that's all you have to do to keep it sharp.
