I am a beginner cook and this is my first set of kitchen knives. the handles and blade are easy to clean in the sink (never wash in the dishwasher). I use an inexpensive Accusharp 001 knife sharpener (also available from Revain) to sharpen my blades every time to give them a nice cut. quirky, not flashy, but SUPERB cooking tools in my opinion! UPDATE -- 12/29/14 These knives are still used regularly (3-4 times a week) and continue to do a great job. No problems with pitting, discoloration or rusting of the blades. A bread knife is used only occasionally, but it comes in handy when you need to cut or score half a loaf of uncut bread. Fresh ciabatta and a toaster will change the way you think about homemade sandwiches! Another tip for all novice cooks: I completed this set with an IKEA "Slitbar" paring knife. It's beautiful to look at, comfortable to hold, comfortable to use, and has become my cutting tool for 80% of my prep work. Between the Slitbar and my Victorinox set, I have a useful and functional set of knives that can handle most cutting tasks in the kitchen. Happy cutting!
