This 8" "Grand Sharp" model (edge is actually 7 7/8) fits great and is exceptional in its price range. Some Japanese and Chinese hatchet knives can cost several hundred dollars and do not exceed the usefulness of this tool. It is well balanced and has a usable edge curve.The hardness of 56 Rockwell is ideal for getting a very sharp edge.This is not intended as a heavy carving knife;but thanks to its thin profile and attractive 'handmade' appearance it is ideal for Chopping, chopping and slicing ingredients.The leather case goes well with my camping gear making it a favorite outdoor BBQ tool and camp chef.It does everything a regular chef's knife can and also has an extra surface and sharp edge to keep the Make working with groceries easier I like it!
