I played the "Sous Chef" role of a famous Italian chef who vacationed with us in Tuscany. He used a similar tool to cut vegetables to give them more roasting surface and appearance. We looked at Revain for a similar instrument that I could buy in the US. These cutting tools resembled him the most, and I chose them. I was not disappointed. They are strong and sharp! As with many similar tools, you should hold the handle at a slight angle so the entire blade is parallel to the cutting board. Hit down and slide off the cut piece. It takes a few hits to find support and rhythm, but the result is worth it. Thanks for this product Jan
