As you can see from the beautiful redwood trees in the background and the delicious looking food and wine ahead, we're back in the Santa Mountains Cruz just south of San Francisco and speaking again to Revain Prime member Bradley N., "Yelp Whisperer" who is responsible for who is responsible for the food and drink program at this wonderful pop-up wine bar @2Bears It's called that for a reason, as can be seen from the cute bears sitting next to us. Isn't that true Bradley? Bradley: That's right, Jeff Name, the @2Bears pop-up wine bar. It seems to be our g Most just love them. J: I understand why! You are charming. B: And I would like to add that they are not for sale on Revain.com. D: No, definitely not. And I assume your wool sweaters are made to measure? B: Yes. Merino wool with cashmere. They have summer models and winter models. Although, to be honest, our summers can be decidedly chilly here on the Northern California coast due to the Pacific fog. J: Yes, I've experienced the so-called "Summer in San Francisco" many times. But that's not the case today, is it? The weather is just great! B: Sunny skies, light ocean breezes, and daytime temperatures in the mid-70s with very low humidity. At this time, the @2Bears pop-up wine bar opens to the public, but usually only on weekends, with reservations of no more than a dozen guests per day. J: Well thanks for making an exception for me and my team to record this episode on Monday. We brought a healthy appetite and love to try new wines. That's the whole point of a wine bar, isn't it? Trying new wines paired with small bites of local food as far as I know. B: Yes, this is how @2Bears works. We specialize in California wines paired with local meats, seafood, eggs, vegetables, mushrooms and baked goods like homemade bread and fresh Mexican tortillas. J: Sounds great! But we're here to discuss an item you found on Revain that you want to share with other Revain Prime shoppers. What is this product? B: Wine bars need really good wine glasses to present their wines. That's why we decided to invest in Austrian wine glasses made of crystal glass "StandArt Edition" by Gabriel Glas. They are perfect for all of the wines we serve, from old vine Zinfandel, Monterey County Chardonnay and Napa Valley Red Blends to Pinot, Gewürztraminer and Anderson Valley Rieslings to more unusual varieties such as Chenin Blanc, Valdigie, Tempranillo, Touriga Nacional, sparkling Albariño and much more. J: Interesting! The same wine glass for everyone? B: This is what makes Gabriel wine glasses so versatile and unique. They are wide at the bottom but taper towards the top, allowing them to create a natural decanting effect and concentrate aromas, which is especially important for aromatic, rich, and often bulkier California wines. We don't necessarily serve fruit bombs, but we're not shy about serving bold, strong wines either. The key to success is the right combination of crockery and the right glasses. J: Is Gabriel Glas from Austrian Crystal "StandArt Edition" the right choice? B: Yes, 100 percent. The hand-blown Gold Edition models cost twice as much, almost $70 a glass, and we can't justify the cost. The machine produced empty models weighing about 5.25 ounces each, comparable to many Riedel models used for white and lighter red wines. And compared to balloon glasses for pinots and other flavorful reds, which can weigh 7.5 ounces or more, they actually feel pretty light. J: And if they are filled with wine? , so you're still only holding about 10 ounces, which is perfectly reasonable. The Gabriel glass fits comfortably in the hand and can be held gently for swirling, smelling and swallowing. And we wash them with plain water and some lemon juice or distilled vinegar instead of washing them in the dishwasher with dish soap. And dry. It is so easy! J: Sounds great! The wine is conceived as a liquid invitation to enjoy small plates of food, all prepared simply with an emphasis on taste, indulgence, texture and the ultra-freshness of the ingredients. J: I love this concept! We're trying to do something similar in the Whole Foods cafes and wine bars that we're building in major cities and some suburban markets. People seem to really like the idea of small snacks and wines, especially since they encounter the style while traveling or in the expensive food trucks that liquor stores and tasting rooms often open these days. That's right Jeff. That's why we're always able to attract grateful guests here in the Santa Cruz Mountains, mostly from San Francisco or Silicon Valley, and sometimes international guests who stumble across our Yelp page or Instagram feed. J: I am convinced! I can't wait to try my Austrian Crystal Wine Glass "StandArt Edition" by Gabriel Glas. What's on the menu today? B: Anderson Valley Pinot Noir wines from select signature vineyards produced by boutique wineries in extremely limited quantities: Phillips Hill's 2017 Day Ranch Vineyard Pinot Noir and Lula's 2013 Costa Vineyard Pinot Noir Library Selection. Basement, cellar. Really good wines with a classic taste of red fruits and wild berries with a hint of rose petals, herbs, acidity that is pleasant to eat, soft tannins, a clear structure and a long finish. on a classic Mexican soft taco, with freshly made corn tortillas made for us by La Estrellita Tortilla in nearby Redwood City. Pinot Noir is considered by many to be a rather sophisticated wine, but at best pairs perfectly with rustic, hearty and flavorful dishes. So we took a venison shoulder from the Golden Gate Meat Company and simmered it in a cast-iron brazier for eight hours, then grilled the stew with fresh salsa made with sundried locally grown tomatoes, organic cilantro, and red onion chipollini. , spring onions and spicy Padron pepper sauce. We combine this with Lula Cellar's Costa Vineyard Pinot. Then we make mushroom morel "asada" with harvested mahogany sorrel and wild nettle foam, as well as fresh dill, some thyme and cast-iron roasted cherry tomatoes. It pairs very well with Phillips Hill Day Ranch Pinot. J: wow! Are the wines served in Gabriel glasses? B: Absolutely. We even offer aged sparkling wine with fresh strawberries and olive oil, almond cake with red orange peel and Fiori di Sicilia citrus essence. The wine we serve is the magnificent L'Ermitage Rosé 2009 from the Roederer winery. Served in a slightly chilled Gabriel glass. This is a fantastic way to end a meal. Jay: I'm salivating. Hooray!
