I know a lot more than I should about the metals used in knives, from D2 to Aus 8, CPM S30V etc. I know which metals are high carbon, which hold a blade well, which are easy to sharpen and last a long time hold permanently. . edge. I say all this to say that I am very picky about any cutting tool I use. It has to look good, feel good, and I basically want every knife I have to be shaveable. I read many reviews about this knife. There are plenty of these at Revain, but this one seems to get consistently high marks. Plus it cost next to nothing. $18 for a chef's knife is the lowest price you could ever find. Check out the high-end segment and you can find chef's knives for $400 and up. I decided to give this knife a try as a "nothing to lose" deal since it got such great reviews. This knife arrived in the mail today. I checked the package. Of course, for such a cheap knife, the well-made and beautiful custom packaging was a pleasant surprise. I took it out and held it, and immediately it felt the right weight and balance for a knife of its kind, begging to be used. I checked the edge. As many have said it was razor sharp, much sharper than most knives when they are sold. But by gently running my thumb along the edge, I felt the edge could be made even sharper. So I spent 5-10 minutes running the knife through many sharpeners. Then I checked the edge again. Let me tell you I didn't have to try to cut the paper or shave the hair off my arm. This knife was so sharp it almost scared me. I have over 50 knives, many of them quite expensive. Few have ever matched the sharpness this chef's knife has. I happened to have some beef I wanted to cook up for dinner. I used my new knife. After slicing for about 30 seconds, I mentally told myself to be VERY careful with this knife in the future because this beef cuts like tofu. That's what I mean when I say "terribly hot". So here it is. If you want something made out of formed steel, or real Demasc steel, or something to leave your kids as heirlooms, I don't think an $18 knife is for you. But if you plan on cooking dinner and want to cut something with a knife that can be made ridiculously sharp and cut anything and everything with almost no effort, I recommend this one. I would pay a lot more for it with no regrets. But for €18? This is theft. Buy one for yourself now and keep that edge off your fingers!
