Review on 🐦 Zelite Infinity Bird’s Beak Paring Knife 2.75 Inch - Premium Japanese Steel, Pakkawood Handle & Leather Sheath by Logan Goozmer

I have had this Zelite Alpha-Royal / Executive Chefs Edition knife for over a month now. I also have a Birds Beak paring knife. As a chef and now retired I have used the best knives in the world my entire life. This is an exceptionally thin knife. Beautiful in every way. My chef's knife fits perfectly in my hand and my index finger wraps around the steel in front of the handle. This is how it should have been captured. I especially like the weight because that balance (helps you work). I wanted to wait until I had a chance to sharpen it a few times to check. I use ceramic sharpening steel (Ceramic/Green Elephant, 1500 grit) and I can make this knife and the Parrot Beak Knife so sharp, I mean scary sharp. Sharper than my Wüsthof, Hinkle, Shun. This V-10 steel is so hard I can make it as sharp as a scalpel. Thanks to the weight and the shape of the handle, it is a pleasure to use. It appears to cut on its own due to the balance and weight of the steel and handle. The good blade width allows you to transfer cooked food faster and in larger quantities without using a board scraper. It is simply a very good knife, the quality is right. The Parrots Beak Paring Knife is balanced to stay in your hand while you work with it. Not too curvy like some others. These 2 knives are your main knives for cooking or whatever. This is a must if you cook, trust me you won't be disappointed. Did I say that you can make them very sharp because that's what I like most about them. Watch your fingers.
