I have several types of sharpening tools - whetstones, worksharp and onion hand tools, sharpeners for quick and dirty cuts, a few tungsten carbide blade sharpeners. . My dad was a supermarket butcher and taught me how to use whetstones, so I'm used to doing it on any knife, but I wanted to test other methods and this pressing tool shows promise. Once you get the angle right, you get the same edge on both sides, which can be tricky with other methods. The only thing I don't like is small blades, because sometimes the knife holder can get in the way of the sharpening elements and you can damage the elements and/or the holder. And it's probably impossible to get it working with a blade longer than about a foot, or with something thick and heavy like an axe. but that's why there are so many sharpening tools.
