My wife is the family cook and her knife skills are superior to mine. This thing is heavy and their small hands are fed up with the weight and balance of the blade. It's a nice piece of metal, though, and holds its edge and edge quite well. This is a double bevel blade so sharpen and sharpen accordingly. This knife has become my favorite knife, but even my hand gets tired from it. I'm hoping over time to build more muscle in my wrist and forearm so that slicing, slicing and other knife work doesn't seem so tedious anymore. .
