I have some high end knives including Shun, Wustoff and some others. Most cost a lot of money, but I'm always on the lookout for new technology and new knives. I stumbled upon this knife by accident which had some terms I was unfamiliar with such as: B. AUS-10, and did some additional research on some of the other features of this knife. The more I read, the more intrigued I became, so I decided to give it a try. When I first received this knife, the first thing that struck me was that it was heavier than other 8 inch chef's knives I have. Upon further research and contacting the buyer I learned that there is a good reason for the extra weight which will be explained below and I also appreciate the elegant packaging of this knife which comes with a velvet lining and sheath for protection of the knife. In my opinion, the sheath is essential when storing your knives in a desk drawer. It protects the blade from dents and scratches that damage the blade. The included sheath is not bulky and secures the knife in it. With other knives I've bought, I've had to buy a bulky sheath that took up drawer space. Below is the information I found during my research that led me to try this knife. I also advise you not to wash your good knives in the dishwasher. This can cause dents in the blade, which will adversely affect blade life. Clean the knife with mild soap and water and store in the sheath provided. • Knife sheath included - When storing knives in a box, it's a good idea to use a knife sheath to protect the blade from dents and scratches. - Normally, the knife sheath needs to be purchased separately, and this knife includes that the knife can be fixed in it. • Aus-10 Steel – Hardness is due to the high carbon content, resulting in knives that can be easily sharpened to razor sharpness. . When sharpening edges with carbide inserts there is a risk of breaking the carbides instead of sharpening them. this does not happen with fine-grained, densely packed cemented carbides. - Nickel, manganese and silicon are added to improve the ductility and elasticity of the steel. - The combination of vanadium, chromium and molybdenum makes the steel corrosion and wear resistant. AUS-10 knives are not prone to rust and do not require frequent sharpening. • Rockwell Hardness - These knives have a Rockwell Hardness rating of 62+ - the higher the Rockwell Hardness, the harder the steel, the better the sharpening. hold and the less often you have to sharpen it. - Although higher Rockwell hardness can cause the steel to become more brittle, AUS-10's high carbon content results in a significant increase in wear resistance and edge retention. • Blade Angle - The blade of this knife is 8-12 degrees. which corresponds to Asian sharpening knives. It works just as well today as it did the day I received it. I've since bought a few other knives, but so far none have surpassed this knife in terms of sharpness. Because I was so happy with this knife I also bought a 6 inch utility knife which I am just as happy with. So far I am very satisfied with the sharpness of this knife and can only recommend it.
