My new favorite knife is a Home Cook Review

I cook all meals for my family and cook 6-7 days a week. I have never had a Nakiri Bocho before and after using this JACO I don't understand why I waited so long. Before that, my main knives at home were a cheap HECEF Santoku and a Zyliss set of western kitchen knives. This is now my favorite knife. It's perfect for my cutting style, with a completely different focus that better suits my knife work and the types of ingredients I use. It is also a feast for the eyes with its handle made of pakka wood and the Damascus blade. I prefer wood to any other material. It's more attractive and comfortable to hold than steel handles or ugly plastic. Although the Nakiri is a paring knife, I also use it to cut meat, like a Chinese cleaver. I used it today to cut various veggies (taro, tomatoes, peppers), tofu, and beef for stir-fries compared to my other knives. I found my Zyliss and Hecef hot. This JACO Nakiri cleans them of dust, makes them thinner and lighter. My only complaint is the overly complex case. I think some people will keep it for demo purposes but for me as I will be using it every day it's a waste of time with foam inserts and a fancy box. If you take care of your knives, wash them by hand and dry them with a towel. Only my Victorinox Fibrox waste knives are dishwasher safe.
