I use John Boos Mystery Oil on two Boos cutting boards along with a pizza peel and another wooden cutting board I have. While the process of oiling boards isn't necessarily clean (it's oil, after all), it certainly isn't dirty. The oil absorbs very well into the boards and I have found that a treatment usually lasts two to four weeks depending on the intensity of use. When a board is first treated it may not last as long as there is a lot of wood for the oil to penetrate. The oil leaves no smells and tastes. To take care of the four boards above I have not finished my first bottle and it has currently been in use for over five months.
