I've been using this knife for most of my cooking for about a week now. I am by no means a knife expert. I usually have a knife that I use for almost everything. I decided to try this one too and replace/backup the one I've always used. I really like this knife. It's very sharp, feels nice to the touch, and easy to clean, although I've become more careful about using or cleaning it now because of the sharpness. I don't know how to describe it, but one thing I really liked about the cleaning is the handle and blade design. I'm used to a knife that's just a straight piece of metal with a flat handle, which makes me feel like something could go in there. This knife has a sculpted blade that curves in front of the handle, making it less likely that something will find its way where it shouldn't. The knife is heavier than I'm used to, but feels good when cutting.
