My wife has a lot of knives. Sometimes I think it's too much. However, cooking is one of her passions. So if you want to pursue your passion, it's good to have the best tools at your disposal. Looking through her collection I noticed many types of knives but not the Kiritsuke knife so I decided to get this one for her to give her a whirlwind. . The knife is also well balanced and has a good handle that feels good in the hand. I admit that it has a point on the blade that I've never seen on a kitchen knife before. I'm sure this will do the trick, but I'm not sure what. This product has been tested on vegetables, fruit, meat and fish and each has a very clean and even cut. If I'm not mistaken the blade has a slight curve which came in very handy when finely chopping vegetables as the blade could be swung back and forth on a chopping board. Overall, my wife and I were very impressed. with this knife. If you or your loved one love to cook, then I recommend this knife to you!
