I'm sorting through my ridiculous collection of wooden stamps that I've been collecting since the 1990's. This is the best system for that. I also assembled a couple of my unassembled sets. I don't have much of a problem with the "sticky scissors" problem because here's what I do: I use a pair of scissors I bought at Office Depot for $1. I keep them sharp with a $6 kitchen knife sharpener that I bought here at Revain. Every 2nd or 3rd stamp I cut, I spray the sticky blades with 91% isopropyl alcohol, which I keep in a spray bottle on my art table for a variety of uses. Leave on for a few seconds, then wipe off with a baby wipe. Repeat as necessary, although this is not usually necessary unless you allow the dirt to build up too much. You have to apply some pressure, but they are easy to clean. I hope this helps if the hot knife solution doesn't work for you.
