Review on πŸ”ͺ Cangshan Thomas Keller Signature Collection 2-Piece Carving Set - Swedish Powder Steel Forged in Walnut Box (White) by Nicole Jones

Revainrating 5 out of 5

Beautiful knife set in a gift-worthy wooden box; Works flawlessly.

Beautifully designed wood carving set - the knife is very big but not too heavy. It has enough weight to help the blade cut through meat, but isn't so heavy that slicing a large turkey or roast is tiring to the hand and wrist. It is very well balanced and feels very comfortable in the hand. The fork is also well balanced. My existing carving kit looks good, but that's about the only good thing I can say about it. The knife has a serrated blade that chews meat instead of cutting it, which is why it has only come out three times a year for the past thirty years; just for a nice presentation on the holiday table for Thanksgiving, Christmas and Easter. This carving kit is so much better than what I have used, there really is no comparison. I ordered it a few weeks ago but had to wait until we had a roast to properly test it. With a 10 1/2 inch blade, this knife is one of the largest knives in my collection, as well as one of the sharpest, and it really does take a lot more than it takes to slice our four pound Sunday lunch roast - it looked like it out. a bit like the picture in the product description where the knife overshadows the rather small ham. The knife is very sharp and I was able to quickly cut nice, thin, even slices for great presentation (which I can't usually say). I hardly had to exert myself and the knife just cut cleanly through the meat. This set can easily handle much larger cuts of meat or the largest Thanksgiving bird and is great for slicing up leftover meat for sandwiches. I'm used to the curved fork in the carving set so it took me a few minutes to get used to this one. It's also quite small compared to the size of the knife. This set looks and feels high quality and works great . All of my best quality knives have a typical 20 degree bevel angle. The blades are German steel so I'm curious to see how this knife with a harder 16 degree Asian style steel blade performs over time in terms of sharpness and ability to reach and hold the blade. The carving set was beautifully wrapped in velvet. Walnut case engraved with a knife and fork and the chef's signature. The box has a strong magnetic closure and the pieces are arranged in recesses inside, perfect for storage. To be honest, while I think it's a great set and would love to have it, it's something I wouldn't use often enough to justify the very high price tag. We roast often, but mostly small pieces of meat. We can only eat a large roast or turkey three or four times a year at most. For the same amount of money (currently $279.95) I would rather invest in a few smaller utility knives in this line. I think this set is more suitable for those who regularly cook or grill for a large family or often entertain guests. Of course, it makes a wonderful gift for anyone who loves to cook and appreciates fine cutlery, as well as a budding chef or grill master!
