My family only uses JA Henckels knives. My mom gave me one of her santoku knives when I went to college. I used it for years until I lost it when moving. Now that college is behind me and I live in my own house, I decided to buy this set of knives as a little housewarming gift for myself (laughs!). I really like these knives, they are VERY sharp! I've accidentally cut myself with a paring knife. It was so sharp I didn't even feel it. So be sure to use with caution. I do not recommend washing them in the dishwasher. After use, I rinse my knives with soap and water and dry them with a kitchen towel before putting them back into the block of wood. With proper care, these knives can last a lifetime. I also bought a santoku knife (same series) to add to the wood block. I always look forward to using these knives in cooking, strange as it may sound, they are fun to use.
