The fit and finish of this knife is very good I have several expensive knives that don't look any better. The handle is longer and larger than many paring knives, which is a plus. Better than I expected from a $24-25 knife (although the price is much higher on some sites and under various Shun knife company names). The edge is also sharp out of the box, not really necessary but I'll probably sharpen the edge with a 1 micron polishing stone (just a habit). Couldn't pinpoint the exact steel but read on a forum where a moderator tested it for Rc56. While not the hardest of steels, it's probably good enough to hold a reasonable cutting edge for its intended use. My wife likes it too which is good as I bought it for her. I wouldn't hesitate to buy another one for a friend.
