Recent Oyster Shucker

I work at an oyster bar and these knives the company buys and then we buy from our boss. Anyway, I needed a new knife and I found them here! Great quality and opens oysters (if you know how to open them) with no problems. I use these knives to clean Louisiana and Texas oysters. When cleaning oysters with more fragile shells, tend to use a thin, pointed knife (like a clam knife) to avoid cracking the shell (this has been found out the hard way with WV oysters). I work about 25 hours a week, 2000+ oysters a week and this knife has lasted 3 months without dulling.
