Description of Cangshan X Series 59144 Santoku Knife - 7-Inch, German Steel Forged

Hand crafted full tang knives forged from tight grained, X50CrMoV15 German Steel for incredible durability, stain resistance and exceptional edge retention. USPTO Patented Design. Each blade goes through an (ultra6) stage heat treatment ensuring every blade maintains it strength and function. Hand sharpened to a 16-degree angle per side. Well balanced 5.5" handle and 7" blade with HRC 58 +/- 2 on the Rockwell Hardness Scale. Oval depressions on the blade create air pockets that eliminate drag, facilitating even carving. This Santoku knife can be used for mincing, slicing, chopping vegetables, slicing meat, and disjointing large cuts. Works well for heavy kitchen use. NSF International Certified. Lifetime Warranty against manufacturer defects. Wash knives with warm water and a little detergent, rinse carefully and dry with a towel.

Very nice cutting movement

Very nice cutting movement, super sharp out of the box, came in a very nice box. Light and very beautiful knife. The handle is very nice to hold, slice, slice and dice. Very comfortable to the touch, I will update after a few months of use.

Light on the wrist, ideal for cutlery and knife accessories

This knife has become my favorite knife. I'm a home cook with wrist problems. This knife makes cooking a pleasure and feels very well made. The ergonomic shape fits my hands and wrists perfectly; I don't get as tired as I used to with other knives.

I don't often write reviews, but this Cangshan knife blew me away in every way. The quality and value far exceeded my expectations. Now I realize that I spent many years with famous knives like Shun and Global. This Cangshan knife is as good if not better than any German or Japanese knife I've ever used, but at a fraction of the cost.

I could marry this knife!

I bought this knife a few months ago and it has become my favorite knife. I love it! I was so skeptical and overwhelmed to find a good knife. They tried to buy a block of knives, watched them break and become dull, folding the useless knives in the process. This is the first knife I've bought myself and I love it! Good knife at a good price

I've been using this knife for a few weeks, I think it's great and it quickly became my favorite. The handle has a modern look and is comfortable to hold, although most of the time I use a claw grip when cutting. The knife was very sharp right out of the box. Due to the excellent price-performance ratio, this knife can be recommended without reservation. I got it on sale for <$30. I might consider buying the rest of the set if I need it. To update. Probably the best Santoku for under $25.

I thought this knife was too good to be true. Forged 7-inch full-stock German steel Santoku with a nice grip for about $20? No way. But now I can vouch for this knife - it's a legitimate value and a damn good knife for the money. I'm really amazed at its quality. Sharp edge, nice polished finish and even a little weight in the grip for a comfortable feel and good balance. I was a bit worried about the seemingly square roll. This blade far beats the price.

I'm 100% honest I was concerned about the quality of the softer steel in terms of blade retention but I could NOT be happier with the results, the performance.
