Quality control problems.

This thing was beautiful right out of the box. The weight and balance were perfect for a paring knife given its size. The profile was nice and thin beyond the edge. Unfortunately it came with a shackle from the handle to the leading edge. You could also see ripples in the metal around the rim. I think it's all quality control issues. If they get it right, this thing is going to be a hell of a tool.

sharp and durable on steak sets

This is a knife with an 8-12 degree hardness, 61+ Rockwell hardness. It was built as said. Surprisingly, it outperforms my $200 Yoshihiro and Shun knives! This is a lightweight vegetable cutter that also does a great job with meat. It's thinner than a $200+ Shun paring knife, so it's less of a hassle. It is not designed to work with chicken bones or cut bones. Use it for what it is intended for and you will appreciate and praise it as I do.

Great blade for the money

My last Nakiri blade was a Pioneer Woman brand which has served me well for over 2 years but the blade started to chip and needed constant sharpening. I hope that with the cost of THIS Nakiri I won't have these problems for many years. Extremely hot out of the box, I ran over red cabbage, bok choi and vidalia with ease. The damascus pattern is beautiful and the overall quality of the blade appears to be worth the money, but only time will tell if this is the case. Having only used it once (soโ€ฆ

Light, nice weight, great blade

I've recently fallen in love with this type of Damascus metal in kitchen knives (67-ply Japanese AUS-10 steel). This JACO MASTER is made from the same metal as my favorite Santoku knives, but lighter thanks to the wooden handles. JACO MASTER says they have a full shaft but can't see it and there are no rivets so I'm glad it's listed. The lighter weight means the balance between blade and handle is fairly even. . The balance is matched with a comfortable grip, and the metal is just beautifulโ€ฆ

My new favorite knife is a Home Cook Review

I cook all meals for my family and cook 6-7 days a week. I have never had a Nakiri Bocho before and after using this JACO I don't understand why I waited so long. Before that, my main knives at home were a cheap HECEF Santoku and a Zyliss set of western kitchen knives. This is now my favorite knife. It's perfect for my cutting style, with a completely different focus that better suits my knife work and the types of ingredients I use. It is also a feast for the eyes with its handle made of pakka

Pros
  • Brilliantly made
Cons
  • Insecure

I love a nice knife for my culinary needs. This is an excellent 8 inch serrated bread knife, made from AUS-10 (SS) Japanese Damascus stainless steel which is multi-layered to create a thin blade with a hard edge. It has a strong and balanced Pakkawood handle. It uses a full stock design. The blade of the knife has been hardened to a Rockwell hardness of 61. That's a pretty high value. With high-quality AUS-10 steel and a special forging process, the Rockwell hardness reaches 61 HRC. Typicallyโ€ฆ
