Works as described.

I have worn my 20 year old Wüsthof knives and they are better than new. I even switched some of the smaller ones to Asian style 15 degrees.

No more boring knives

I wish I had bought this a long time ago. Not the easiest device to master - there's clearly a better technique out there that gives better results faster, but the end result is magic! Now the whole family wants to bring their knives here to be sharpened - such was the impression of butchering a turkey with a freshly sharpened knife. It's important to warn guests not to be careful with knives (because they've been recently sharpened) or risk going to the emergency room for hand/finger stitches.

Excellent knife sharpener

This machine perfectly sharpens Japanese and European protractors. I can't do it well with any other method. However, I still can't get the ultimate really sharp finish without touching the blade of my clay sticks. I run the blade very gently over the clay sticks to get the desired result. I've only had the car for a week, maybe I'll get better with practice. I have previously purchased a paper wheel and 1 inch leather belt sander and just cannot get the results I am getting with this chef's…

This product is rated for 110V, 60Hz, 125W and 2.1A. You may need a separate step-down transformer depending on your country. I used it to sharpen 2 knives - a cleaver and a fruit knife. It took me about 15 minutes to get a sharp edge on my cleaver which went completely dull after 2 years without sharpening. Easy to use and works well once you understand the instructions

It took me a while to get this as I kept thinking back and forth that it really would be just as good to use a hand sharpener the knives. I'm glad I got it. Every week or so I don't think about quickly running the knife through the slots on the right side 10 times on each side and it obviously makes a difference. I've always been a manual whetstone since I started sharpening knives as a kid. Time is short lately and my knives just got dull because I didn't have time to get it right so I didn't do it at all.
