This item is super light and insanely sharp

This item is super light and insanely sharp. I bought it to replace an outdated version. Of the three originals I bought almost 25 years ago I only have one left, the 6" Chef. It's still insanely sharp, balanced and versatile. I expect this to be the same if it is does not get lost.like the latest Henckels 4 stars are the best knives I have ever used.

Pros
  • The SIGMAFORGE knife is forged from a single piece of solid steel
Cons
  • Quick Start Guide

Loved but loved, loved, loved

I am a loyal member of the four star nation. Ha ha. Seriously, I won't buy anything else. The grips are the best and the edge is 15 degrees sharp. But they are expensive. Some of them will go on sale and some will come in packs. This little knife is like a scalpel. I can't comment on its peeling/cleaning ability because I don't hold it that way and don't need it to. I use it for things like removing cores and ribs from peppers.

Pros
  • 15 degree hem angle on each side
Cons
  • Available in black only

Very, very hard to beat JA Henckles cutlery

I bought the complete set back in 1992 on a business trip to Germany (10 pieces plus a wooden knife block). A few years later, my brother gave me the same set of six-piece steak knives for Christmas. We used all of these knives on a daily basis. No problems with any of them. However, my wife broke the tip of a 3 inch counter knife trying to use it as a screwdriver. Bought a replacement right away. Then, a few years later, my wife had a pretty big kids' party at home, and the 3-inch twin knife…

very practical: paring knife

I love this knife! It's very sharp, feels good in your hand and the size is very convenient for cutting small objects like mushrooms, peeling apples, etc. It also doubles as a chef's knife for my 3-year-old daughter who loves to cook. with Mom and Dad in the kitchen (under close supervision mind you!) I also like my 4" version: JA Henckels Twin Four Star 4" High Carbon Stainless Steel Paring Knife. I really like having both, but if I had to choose between two, I would go with the 4 inch knife…

the return of a trusted old friend

I bought one of these in the late 80's while trying to improve and modernize my kitchen. I've been using it daily for decades and I'm completely satisfied with its performance. A few years ago, he disappeared one summer after a series of parties. After sharing my dismay at the loss of this knife, my wife bought another, but not this particular model. I continued to miss the quality, design and handling of this particular model. So I finally decided to order a replacement for the one I lost a…

Great everyday knife

We've had the Four Star knife set for 14 years and the number keeps growing. Steel requires light maintenance. I've had no luck with home sharpening tools, especially electric ones, which I wish I never had to use. All I need is a sanding tool and a professional sanding every few years; They last almost a lifetime. This knife replaces our current 3 inch paring knife because we use it all the time and I haven't done any good with sharpening at home. I recommend finding a local craft or…

Expensive but great

I usually dislike ice-hardened German knives (Henckels and Wüsthof) because cheaper and lighter stamped blades from good manufacturers (Victorianox) work just as well and somehow work better. Ice hardened blades are much more difficult to sharpen, many people just procrastinate and end up with very expensive blunt knives which is a waste of money. This Henckels we bought almost four years ago has become the paring knife my wife and I always reach for and I'm in the process of buying a second…

Pros
  • Ergonomic polypropylene handles permanently bonded for seamless precision and clearances
Cons
  • Legacy model
