Non-Stainless Steel

Carbon steel blades require slightly more maintenance than stainless steel, but JMHO, they are easier to sharpen and hold their edge better.

A lead made into a camping knife

Modified lead. I love these knives! I've sharpened it to the hairline, cleaned the handle, 90 degrees on the back and mustard patina. Now that's a fantastic knife!

Good but limited

Could have been sharper out of the box but a few minutes of work brought it back to acceptable cutting performance. I was hoping to turn it into a working bushcraft knife but alas it now sits in a kitchen drawer.

Necessary! suitable for chef's knife

They get boring. One of them is better to cut meat from a big blue one with a dull than with a sharp knife. I do not know why. It will rust if you let it hand wash, dry well, then rub with vegetable oil and store in the K-Bar case. You don't have to choose the best, but personally I prefer leather.

Old school, the best of chef's knives

When I was a little kid, my grandma had an old wooden-handled butcher knife in the kitchen and this old hickory butcher knife reminds me of her knife. the quality of the steel in this one because it was so worn the blade looked like the outline of a humpback whale. and nice to see - MADE IN USA - stamped right into the steel of the blade. Excellent quality "old school" butcher knives, made by our friends here in America. Thanks very much!

These are great knives!

These are very simple good knives. You will have to hand wash them and coat them with olive oil etc after use as they are made of very high carbon steel which can be easily sharpened to a very sharp edge. They are intended for people who need quality knives and are willing to pay special attention to them. That's all you'll ever need unless you're pretending to be a super chef or something. Compared to a $200 knife it sucks. Compared to a $50 knife, this is really good. This is an economical option for those who need a spare or inexpensive carving knife for a cabin or campground. The blade took about 30 minutes of reprofiling and sharpening to get it sharp and ready to use.
