Description of 🔪 Yoshihiro VG-10 46 Layers Hammered Damascus Gyuto Japanese Chefs Knife with Octagonal Ambrosia Handle - 7'' (180mm)

The VG-10 Hammered Damascus Series has been a perennial best seller, combining performance, beauty, and extraordinary value. [[TRADITIONAL GYUTO STYLE] The most versatile and essential of all knives a cook can have is a Japanese chefs knife known as a Gyuto knife. The Gyuto is a Japanese chefs knife with a curved blade that smoothly rocks back and forth and has an extended tip for quick chopping that can be used to cut meat, fish, and vegetables. [46 LAYERS DAMASCUS VG-10] Proudly made in Japan and forged and hammered with 46 layers of steel in the Damascus tradition with a VG-10 Core. [HAMMERED TEXTURE] The hammered texture of the blade eliminates friction and keeps food from sticking to the blade. [ERGONOMIC OCTAGONAL WA-HANDLE] This knife is complimented with a traditional Japanese Wa-style handcrafted Octagonal Handle that is lightweight and ergonomically welds to the hand for seamless use. [INCLUDED SAYA KNIFE COVER] A protective wooden sheath called a Saya is included, which protects the knife and adds to its appearance when not in use. [WHETSTONE RECOMMENDED] Traditional Japanese knife making values a sharp edge, which requires attention and care. Sharpening and honing should be done with only water whetstones. [CARE & HANDLING] Hand wash and dry only, and do so immediately if working with acidic ingredients. Do not use on objects such as bones, nutshells, and frozen foods. From dicing, slicing, and chopping fresh produce from a farmer’s market to carving a roast chicken straight from the oven, even the simplest tasks are elevated with a handcrafted knife that is as beautiful as it is functional.

Worth every penny!: Gyutou Knives

Although they are expensive, you can't expect quality cheap and in the past I've paid more for less. This knife is by far the main knife in my cutlery arsenal, both in the home frying pan and in the kitchen. It is absolutely worth every penny and actually worth more than what I paid for. I will buy more of them I'm sure.

Pros
  • Satisfied so far
Cons
  • Can't remember

Great blade for cutlery and knife accessories

I've been using this knife in the kitchen for a few weeks now and couldn't be happier. The low weight makes many hours of work much easier. As a chef I cannot recommend this knife more highly. The extra €19.99 for shipping is a lot of junk! This company should change this policy as soon as possible. It was just a small plain box and the extra charge is just childish and unprofessional.

Another successful product by Yoshihiro

You have to see the knife to really understand what I'm writing. I have a large collection of Japanese chef's knives and was stunned when I received this one. The quality and finish of a knife that costs three times as much, right down to the knife case. I have purchased other products from this company and have always been impressed with their quality.

Pros
  • Impressive
Cons
  • Minor problems

Just buy this amazing knife!

I bought an 8.3 inch knife. I love the sharp blade, beauty and craftsmanship. Wonderful customer service too. Mine was delivered today. I just found out that I live only 3 miles from the shop so I will be heading there very soon to have all my knives and cutlery sharpened to a high quality in Japan. Goodbye Williams Sonoma and Sur La Table for knives! Yoshihiro Cutlery is my cutlery shop now. For people who say that the price is too high - high-quality products and services fully justify their…

This knife is worth the money

This is an amazing knife. 10/10 would buy again. I use it every day at work in a fine dining restaurant and it has never let me down. Suitable for literally any haircut. Looks great, feels great, it's great. I would 100% recommend this knife to anyone who can afford it and is a professional. This is NOT a knife for the home, there are much cheaper options for the home kitchen. It's perfect for a work environment! The cutting edge holds very well, especially if the bevels are regularly sharpened

Pros
  • There's something special about it
Cons
  • No insurance

Excellent knife for beginners who want to practice Japanese Damascus

Very nice knife and nice unboxing. What I don't like about this knife is that the bevel is an 80/20 grind. It has a double bevel, but most of the edge is on one side. It's definitely a learning curve to hone, which brings me to the fact that he wasn't immediately insane. 20 minutes on my whetstone made it sharper than the factory edge. The last root is very thick, when I cut a potato it splits it and doesn't cut it even though it's sharp. All in all a great knife, except for these few things…

I have found my brand! for Asian knives

After years of addiction to German forged steel, I was nervous about switching to a thin-bladed Japanese blade. It didn't take me long to get used to the switch, and I doubt I'll be buying anything other than Yoshihiro from now on. The price is very reasonable and the knives are excellent. This knife is 2 ounces lighter than my previous chef's knife, which doesn't seem like a big deal, but any pro who spends hours a day with their knife will tell you what a difference it makes. I love how light

Pros
  • Don't waste too much time
Cons
  • for retirees
