Gyuto Chefs Knife are perfect for dicing, slicing, and chopping fresh produce from a farmers market to carving a roast chicken straight from the oven. Forged from a single piece of Japanese Inox Aus-10 High Carbon Stain-Resistant steel (HRC 61). Best in class in edge retention, toughness, and ease of sharpening. Can be resharpened to reacquire its original sharpness for years on end. Stainless steel bolster, full tang, and a high grade composite wood makes for a strong and durable knife that is beautiful, balanced, and comfortable. Handwash with mild cleanser; NSF Approved; Handmade by skilled tradesmen in Japan.

Great knife, great price

This is a really good knife, I've used it very little. Holds the edge very well and does not require much effort to sharpen after prolonged use, and excellent value for money.

I am a beginner cook. This is my third knife and the best I've ever owned. Not only can you sharpen it to an amazing level on a whetstone, but this blade will hold that sharpness for days even after the careful prep work I've put it through. That makes my work a lot easier.

the best knife for everyone.

This knife is ideal for everyone because it is stain resistant, you don't need to clean this knife often like you should clean a high carbon knife and it has a hardness of 60 Rockwell C which is really hard to find is the spot. Solid steel knife. not to mention that it is very light and the balance is incredible, you will never find a knife with these qualities at this price.

As an ordinary chef in a gourmet restaurant, I can say that this knife is the best. My colleagues have Kikuichi, Shun, Global, Masahiro, Tojiro, Hankles, and Wustof, and so do I. But now I have the best knife ever, the 270mm Yoshihiro Inox Gyuto. This is the most beautiful knife I've ever seen. It's thin which I like. It's lightweight yet durable. I am very happy with my purchase.

I bought this as a birthday present for the man in my life. He lamented having lost his Japanese carbon steel knives a few years ago (I have no idea how anyone could lose such a knife, and to be honest I didn't want to know!); So I decided to surprise him with this knife. Novice kitchen loves it

First, I know very little about what makes a good knife and my restaurant experience is limited. However, I can say that it has performed fantastically in the short time I have had this knife. While it might have been a bit large for the foods I deal with day in, day out at a restaurant, personally I like having extra room for the blade in case I come across something larger and it can serve me well after I went It's heavier than I'm used to, but I immediately noticed a difference in qualityโ€ฆ
