So far, so good. the best chef's knives

With the Wasserstein 1000/6000 I got this sharp razor. Pleasant to use and good enough to hold the blade. This grip is comfortable to grip and control.

Excellent balance, excellent sharpness

I own several expensive Japanese knives worth hundreds of dollars. This knife can stand side by side with most of them. No, this isn't a $700 knife, but it's close enough to the price.

I ordered a 7 inch knife. I got .

I ordered a 7 inch knife. I received a 6.3" knife and a 7" sheath. The reel had a noticeable protrusion when it docked on the handle. Previous experience with Taiwanese products has shown excellent quality control. Not in this case. There is also no excuse for measuring blade length incorrectly.

excellent knife well suited for chef knife

The knife is beautifully made, the blade has a sharp edge that can be easily restored after use by straightening it. I use this knife for chopping vegetables and chopping herbs and I can cut a lot without tiring my hand because the knife is very well balanced. The raised edge prevents cut food from sticking to the blade. I recommend it without reservation.

Best knives I've ever used

I bought the smaller handleless Santoku and Nakiri from WoodCraft and made my own out of some Bubinga I had on hand. Bought this for myself and another small Santoku and Nakiri for Christmas gifts. Everyone had pens. The instructions say you can sharpen with steel, but I would only use waterstones for damascus style knives. They are very beneficial.

My favorite knife at Chef's Knives

I have attended several Chinese cooking classes where the teacher had a similar knife. I have quite a few forged knives, some even have Cullens. But this is my favorite. I'll check in with him first. I sharpen it on the whetstone every time I use it. That makes it very spicy! It crushes garlic very well and cuts through the toughest vegetables with ease. Sometimes I wish it was a little longer so I could cut the melon easier. For me it was worth it!

please know i love it for the money its worth

If you don't want to read my long review on this knife please know I love it for the money it's worth, it holds a solid sharp edge for a reasonable amount of time, it's very easy to tweak has a nice grip size and is one of the "most comfortable" knives I own. I have and have used knives in all price ranges and prefer to spend less than 100€ per knife.
