Homemade Pasta is Good for Detergent

I love the taste of homemade pasta, but after my husband and I discovered we were both egg sensitive, I had to give it up. Then I discovered that sodium carbonate is used to make ramen noodles without eggs, so I experimented and found I could use it to make noodles with my pasta machine and it works great. Allows pasta to stick together while cooking. Dissolve 1/8 teaspoon of sodium carbonate in 100ml of warm water. Mix 1/4 teaspoon of salt with 8 ounces of flour, then mix the water with the flour. Knead a little, then cover tightly with plastic wrap and let rest for an hour. Roll out and cut in a pasta machine. No mess, no stickiness, even without dusting with flour. So easy! Some people make their own sodium carbonate by baking baking soda in the oven, but it's so cheap to buy why waste time on it.
