(UPDATE AT THE END OF THE ORIGINAL REVIEW) This multipurpose pizza pan/pan is a handy size, has good non-stick coating and is great. in heat conduction. If anything, he's almost too good at directing because I've found that I've had to reduce the cooking time for thin or delicate foods that would otherwise burn compared to the same foods cooked in a regular skillet or baking sheet . In the photos you can see a simple (and ugly) potato chip cookie I made using thinly sliced potatoes, leeks/scallions. (This is a miniature 9" version that I made in a hurry, so my apologies for the asymmetry and I'm not photogenic!). This pizza pan was such a good conductor of heat that the bottom layer of the potato slices almost burned through in about 2/3 of the normal cooking time. Glad I checked or I'd be left with a pile of potato chips! The pan is so smooth that you really don't have to worry about your food slipping off when you take it out of the oven. If you move too fast, you'll throw the food out of the pan like a frisbee. The lip at the edge is so small it doesn't even exist. You should think of it as a completely flat bowl with no rim. I actually had to use it as a serving platter and it seems to hold up well to the use of cutting utensils. However, long-term use of pizza cutters, etc. may damage the surface. The only downside is that it gets a bit more flexible when it gets hot. At room temperature it is a completely closed circle. But when it comes out of the oven you can feel it bending and bending. It's not a big deal or anything, but be prepared or you'll be even more likely to throw your food off the tray when it comes out of the oven. ------- UPDATE: May 2019 I was going to come back to this review in a month as my suspicion of a durability issue has been confirmed. After a month of continuous use, numerous scratches appeared on the non-stick coating. The surface still handles hot foods well (like pizza crusts, chicken wings, etc.), but you can clearly see that it doesn't handle cutting utensils well. For the record, I didn't really cut and scrape much --- I've only had to use it 2 times as a serving tray, but that was apparently enough to stain the surface. Concerns about where the "lip" rolls under the bottom of the oil pan, the beginnings of rust spots began to develop. This was after washing the dishwasher several times, but certainly not sitting in the water or steam any longer than necessary. Then again, it was an $8 purchase, so it's probably not surprising that the finish scratches or rusts easily.
