We already had a meat grinder, but we were disappointed that it couldn't cut food REALLY thin, especially for Japanese shabu-shabu. I researched on the internet and saw that this model was recommended more than once specifically for cutting shabu-shabu, so I bought it for my wife's birthday. It's a "good" slicer, but not really better than the cheaper one I already had. The blade is easy to adjust with a stepless adjustment knob, so you can choose any thickness you want. The problem, however, is that the ramp will flex and the blade will move fairly easily with even the slightest pressure, so the ramp will be pushed back as you put the meat through the blade, for example, so your cut will be a lot thicker than you cut, and moreover, after several cuts, the blade has moved, which is even visible if you look at the handle, which rotates a little when the blade moves. To counter this you have to press the meat lightly against the ramp as you run it over the blade and with a paper thin cut this just isn't possible, you end up not slicing anything or just slicing it in half. -inch piece at a time. And that's another problem: in most cases, mainly due to the flexibility of the ramp and the movement of the blade, we can't get a complete slice of something unless we set it to about twice the thickness of the standard sandwich . Otherwise it seems the blade comes out about halfway through the meat and we end up with half a slice - or less the thinner we set the blade. The last bit can boil down to technique; Maybe we'll get better with time, but to be honest the whole operation is frustrating enough that we aren't inspired to use this slicer very often and hence it will probably take up closet space.
