Didn't know what I was missing!
More even heat distribution and larger heating surface. Before, the edges of my pan didn't get as hot, so whatever was on the edges didn't brown as much as it did in the center, so I had to mix the food - no more! This should be standard on all cookers - my gas cooker worked like a dream. This durable piece is very easy to hand wash. I didn't know I needed it so much - I can still be a good cook.
