I needed a candy thermometer. This product is way better than grocery store stock. It has a strong frame that protects the glass. What I didn't take into account was its size. It's long so I had to hold it rather than tape it to the side of the pot while I stirred the caramel for 18 minutes. The bottom should not touch the bottom of the pot. So if you're making candy, you can make a double batch so they're high enough in the pot to use a clamp. The directions say to wipe with a cloth after use, but for confectionery you'll need to pour boiling water over it to wash off the hardened candies.
