I thought it would be difficult to use and difficult to make noodles. I had many questions but they all went away as soon as I started using it. I found a simple pasta recipe online. I used 75% RO flour and 25% semolina flour. It only took 5 minutes to prepare the dough. I set aside half the dough to practice making the lasagne and spaghetti sheets. Trust me, you don't need a lot of practice. For me, the hardest part was making the lasagna sheets wide enough. Then I make my first batch of fettuccine and eat it with chicken and pesto. The pasta only took 3 minutes to cook. It didn't stick. It absorbs sauce much more easily than dried pasta and is easy to handle. I immediately cleaned the pasta machine while the fettuccine dried on the dryer. I've since made the lasanga and the cannelloni have turned out well, although I need practice organizing the cannelloni. So overall a great success and I highly recommend Marcato Atlas.
